불로 익힌 첫 끼가 인간을 만들었다는 책. 익힌 음식은 씹고 소화하는 데 쓰던 시간을 돌려주었고, 사람은 그 시간에 불 곁에 모여 나누는 법을 배웠다. 요리는 문명보다 오래된 일이다.
2026년의 요리사들이 다시 장작불로 돌아가는 이유도 여기 있다고 믿는다. 정밀한 기계로 무엇이든 조절할 수 있는 세상에서, 셰프들은 오히려 조절할 수 없는 불 앞에 선다. 어떤 셰프는 그것을 "우리 DNA에 있는 맛"이라 했고, 어떤 셰프는 "나와 재료와 불, 그것뿐"이라 했다. 원시에서 분자요리까지 갔다가, 다시 처음으로 돌아오는 중이다.
나는 도마에서 우드파이어 화덕을 직접 그려 만들었다. 참나무는 향이 진하고 오래 타고, 사과나무는 달다. 나무를 고르는 일부터 요리였다. 세상은 앞으로 가지만, 맛은 뒤로 돌아간다 — 그래서 나는 불 앞에서 가장 요리사답다.
The book that argues the first cooked meal is what made us human. Cooked food gave back the hours once spent chewing and digesting, and around the fire people learned to share. Cooking is older than civilization.
I believe that is also why, in 2026, cooks everywhere are going back to wood fire. In a world where a machine can control anything, chefs are choosing to stand in front of the one thing that cannot be controlled. One chef called it "a taste that is in our DNA"; another said, "it's just you, the ingredient, and the fire." From the primitive to molecular cuisine and back to the beginning.
At Doma I drew and built my own wood-fire oven. Oak burns long and deep; applewood burns sweet. Choosing the wood was already cooking. The world moves forward, but taste moves back — which is why I feel most like a cook in front of a fire.

밭에서 가장 맛있는 부위만 골라 쓰는 대신, 땅이 건강하게 순환하기 위해 필요한 것을 먹는 식탁. 스페인의 한 양어장이 갯벌의 먹이사슬을 거스르지 않고 물고기를 기르는 이야기가 내 요리 인생의 전환점이 되었다. 내가 알던 한국의 사계절 식재료가 조금씩 달라지고 있다고 느끼던 때였다.
그 뒤로 지역 4H 청년 농부들을 찾아갔다. 크기가 작거나 휘어서 상품이 못 되는 채소들 — 밭이 내어준 것인데 밭에 버려지는 것들. 그것만으로 한 상을 차린 것이 '가나다 밥상'이다 — 가치를 나누고, 다양한 밥을 짓는다는 뜻이다. 식벤져스의 제로웨이스트 팝업도, 낙지 머리 순대도, 늘 들고 다니는 텀블러도 전부 이 책 한 권에서 시작됐다.
Not the tastiest cut from the field, but what the land needs us to eat so it can keep cycling. A Spanish fish farm that simply let the wetland's food chain do its work became the turning point of my cooking life — at a time when I could feel Korea's four seasons of produce quietly shifting.
Afterwards I went to find young 4-H farmers. Vegetables too small or too crooked to sell — gifts of the field, left in the field. I set a whole table from nothing else and called it the Ganada Table — "share the value, cook many kinds of rice." The zero-waste pop-up on Sikbengers, the octopus-head sundae, the tumbler I now carry everywhere — all of it started with this one book.
